I’ve been craving muffins lately and now that it has cooled down enough for me to turn on the oven, pumpkin seemed the perfect welcome to the fall season.
The combination of applesauce, pumpkin and yogurt keeps them very moist. Just one glance at the ingredient list will show you that these are healthy enough for breakfast, lunch, dinner or any snack in between, plus they’re yummy enough for dessert! The perfect muffin.
Whole Wheat Pumpkin Muffins
Slightly Adapted from 100 Days of Real FoodYield: 12 standard muffins or 36 mini muffins Ingredients 1 1/2 cups whole wheat flour 1 tablespoon pumpkin pie spice blend 1 teaspoon baking soda 1/4 teaspoon baking powder 1/2 teaspoon salt 2 eggs 1/2 cup honey 1/3 cup applesauce 1 cup pumpkin puree 1 cup plain whole milk yogurt Preparation Preheat the oven to 350 degrees F. Line a muffin pan with liners or spray/rub with coconut oil and set aside.
Using a whisk or fork mix together the flour, pumpkin spice, baking soda, baking powder, and salt. Make a well (hole) in the center of the flour mixture and drop in the eggs, honey, and applesauce. Mix together until well combined. Fold in the pumpkin puree then the yogurt. Do not over mix. Pour the batter into the muffin pan so it’s evenly distributed.
Bake until golden brown and a toothpick comes clean, about 18 – 20 minutes for both standard muffins and mini muffins. Store at room temperature or freeze for a rainy day.

The first day of fall welcomed us into the new season over the weekend. Even though the weather didn’t get the memo, I know I’m ready for cooler weather, apple picking and boots. I’m still recovering from the long weekend. I feel refreshed and exhausted at the same time. Do you ever feel that way?
We spent our Thanksgiving with family and friends and had a lovely time with awesome food! The rest of the weekend was packed with mountain bike riding, night hiking and a lot of lazy too!
How was your Thanksgiving? I hope you had a wonderful time and were blessed with some quality time with your loved ones.
And now that Thanksgiving has come and gone, the Christmas craziness will continue. This year, we’re trying to keep the gift giving under control. It seems like every year we get too caught up in giving gifts. Not that giving gifts is bad, but Christmas is about so much more than presents. Plus, I feel like we should be giving more to those who really need it and spend less time picking out the perfect 20 things to give our friends/families who probably already have tons of things. Do you agree?
So this year, I am going to be very thoughtful in the few things I give to my friends and family, because really it’s about quality, not quantity, right?

I mentioned this when I showed you my 2011 Christmas cards: I love plaid. I love plaid flannel. I have always been drawn towards it and have lately fallen back in love. It reminds me of fall. It’s cozy. It’s cute and comfortable. It reminds me of woods and camping and s’mores and smelling like smoke after a bonfire. So while the plaid trend is here, this post is definitely not an ode to the trend. It’s merely in appreciation of a mostly underappreciated thing.

I’ve been a busy little bee lately working on the business side of things. Finishing up my portfolio and finalizing my wholesale catalog in hopes that I will soon have a use for them!
Once my portfolio is done I plan to walk into some boutiques and cute little shops and start creating relationships. My goal is that these relationships will lead to a few wholesale or consignment accounts. We’ll see!
Once the catalog is complete I plan to send it over to a few shops I’ve had my eye on that I’m unable to visit in person at the moment, which will hopefully lead to some more of those relationships I just talked about.
As you can obviously see, I have not had much time to come up with a substantive post for today, but at least I gave you an update and an inside look into what’s really going on behind the scenes right now. Plus, I’m leaving you with this beautiful picture. Reminds me of autumn. What about you?
