Coconut oil is touted for its many health benefits, for you both externally and internally. It works as an anti-inflammatory, anti-microbial, anti-fungal, anti-viral and improves nutrient absorption. From skincare to digestion aid and its immune boosting powers, coconut oil does it all! Read up on Natural News for some more in depth info.
And while coconut oil is a fat, don’t let that scare you away. Healthy fats are crucial to a healthy diet! Be sure to purchase organic, unrefined, extra virgin coconut oil.
Here’s how I love to use coconut oil:
Skincare: eye makeup remover, skin and hair moisturizer, lip balm, massage oil.
Cooking: popping sweet popcorn (drizzled with honey, yum!) and sauteing apples for homemade applesauce.
Baking: basic substitute for butter and other oils in granola, cookies and tons of other baked goods.
And it’s not just the oil that’s delicious, try coconut butter (aka coconut manna). It’s similar to nut butters, made with the meat of the coconut. I’ve heard it’s delicious on ice cream since it’s a one ingredient “magic shell”. Amazing!
You’ve got to try this Coconut Butter Granola from How Sweet It Is and be sure to make some extra honey-coconut butter-coconut oil-butter-vanilla mixture, it’s awesome all on its own. I’m thinking toffee, an ice cream topping or as a fruit dip. The possibilities are endless!
